Evidencias epidemiológicas de genotoxinas en alimentos.
En la actualidad existen evidencias rezonables de que entre el 70 y el 90% de los cánceres humanos se deben a causas ambientales (Alcántara y Speckmann, 1976; Wynder, 1976; Winder y Gori, 1977). Las causas ambientales incluyen costumbres personales, exposición ocupacional, alimentación y contaminación ambiental. Se cee que los factores alimenticios sean los componentes más significativos en la génesis dela enfermedad (Correa, 1975; Correa y Haenszel, 1978; Reddy et al., 1980; Doll y Peto, 1981; Rozen et al., 1981; Zaridze, 1983).
