RIESGOS DE CONTAMINACION MICROBIANA Y DE ENFERMEDAD POR CONSUMO DE ALIMENTOS EN EL HOSPITAL REGIONAL SAN JUAN DE DIOS DE RIONEGRO (ANTIOQUIA) Y RECOMENDACIONES PARA SU PREVENCION (1)
Abstract
The purpose of the research was to determine the risks of microbial contamination and disease through food consumption at the Regional Hospital of Rionegro (Antioquia), in order to develop hygienic and sanitary recommendations for their prevention.
A total of 271 samples were analyzed, distributed as follows:
Eighty-four 84 samples taken from the 21 handlers that corresponded to 4 different samples for each one of them: fecal matter, pharyngeal swab, hand swab, apron swab.
Ninety-three 93 samples of equipment, utensils and tableware.
Seventeen 17 samples of wall surfaces and environment.
Seventy-seven 77 food samples.
The presence of salmonella and shigella in the fecal material of the handlers was investigated.
The pharyngeal swab samples were tested for staphylococci.
The other samples were subjected to a total microorganism count, a total coliform count per unit of measurement, and presumptive and confirmatory tests for fecal coliforms; vulnerable foods were also tested for staphylococcus.
