En el presente trabajo son discutidos desde el punto de vista teórico, los ultimos avances en el área de aflatoxinas: estructura, propiedades químicas, biosíntesis, activación del citocromo p-450, aflatoxina B1 y ácidos nucléicos, relación entre aflatoxina B1 y el gen p53; factores que favorecen los brotes de aflatoxicosis, síntomas clínicos y efectos tóxicos. También son abordados los temas de detoxificación enzimática, métodos químicos, físicos y microbiológicos de degradación e inactivación de estos agentes.Descargas
