Los carotenos y sus efectos sobre la salud

El presente artículo es de revisión; en éste se examina la importancia de los p carotenos como fuente promisoria de provitamina A en los países menos desarrollados. Se consideran varios aspectos del huésped y del alimento que condicionan la biodisponibilidad de los p carotenos provenientes de la dieta, factores importantes a tener en cuenta cuando las fuentes de vitamina A son de origen vegetal. Igualmente, se analiza la efectividad de la suplementación de F3 carotenos en la protección del cáncer y las enfermedades cardiovasculares. Por último, se proponen algunas razones que justifican las discrepancias encontradas entre los estudios epidemiológicos, las observaciones sobre consumo de alimentos fuente de carotenos y los estudios aleatorios doble ciego con suplementos de p carotenos.Descargas
